Carrot Bread

My family loves this bread a lot! It has been part of our table for many years now and there is a reason for that! It is absolutely delicious and so soft that you can't resist it!

Ingredients
  

  • 600 g plain flour
  • 330 ml water
  • 90 g carrots shredded
  • 2 tsp salt
  • 1.5 tsp sunflower oil can be replaced with butter, olive oil, rapeseed oil
  • 1.5 tsp sugar
  • 7 g yeast

  • 1 Bread maker optionally you can bake it in the oven

Method
 

Bread Maker method
  1. Put all ingredients in the bread maker basket, following the manufacturer guides of order.
    Some bread makers require you to out the liquids first and then the dry ingredients. Other recommend the opposite - first the dry ingredients and then the liquids. So, please, do check and do accordingly.
  2. Fix the basket back into the bread maker and close the lid.
  3. Choose a program for fast or rapid bread making, plus baking.
    Here you have the option to choose one of 2 steps - to bake the bread in the bread maker or to just use it for kneading and then to bake it in the oven.
  4. Wait until the end of the selected bread maker program.
Oven Method
  1. If you are not using a bread maker or doesn't have one, you can use an oven instead. In a deep bowl put the flour, the yeast and the sugar. Mix them together.
  2. Add the water and start mixing by hand to make a soft dough. It might be sticky at first, but it will get better when the gluten starts to develop. It will take you around 5-6 minutes to mix it well.
  3. Add the salt and the shredded carrots. Knead for another 2-3 minutes to make sure everything is mixed properly and the dough develops well.
  4. Cover the bowl with the dough with cling film (plastic wrap) and leave it to rest for at least 30 minutes or until it doubled in size.
  5. Take it out of the bowl and, with the help of your fist, try to push out as much as possible from the air in the dough.
  6. Form the dough into the shape that you want, put it into the baking tin that you will be using and leave it to double it size again. This time it will take you less time to do so, so keep an eye on it. The timeframe depends on the room temperature where you are proving the dough.
  7. When the dough has nearly doubled in size, preheat the oven. Set it to 180°C.
  8. Bake the bread for about 45 minutes. the baked bread should have a nice golden curst.

  9. Take the baked bread out of the oven and put it on a wired rack to cool down completely.
