Amazingly Tasty Carrot Bread

Carrot Bread

My family loves this bread a lot! It has been part of our table for many years now and there is a reason for that! It is absolutely delicious and so soft that you can’t resist it!

There is something truly magical about the aroma of fresh bread wafting through the house, and this Carrot Bread is our favourite way to fill the kitchen with warmth. If you’ve never tried adding carrots to your dough, you’re in for a treat! They don’t make the bread taste like vegetables; instead, they act as a secret ingredient that provides natural sweetness and incredible moisture, resulting in a soft, golden crumb that stays fresh for days.

It is incredibly easy to bake in the oven, and even easier to load your bread maker and wait for the magic to happen! We personally love the crust we get from the oven, but on those days when our schedules are packed, the bread maker is a total life saver—or at least, a dinner saver!

Choose Your Baking Adventure

One of the best things about this recipe is its versatility. Every one of these options works perfectly, so feel free to choose the one that fits your rhythm today:

The “Set and Forget” Method (100% Bread Maker) Perfect for busy days! Simply load your ingredients and let the machine handle the entire process – kneading, proving, and baking. You’ll have a delicious, warm loaf ready for dinner with practically zero effort.
The “Best of Both Worlds” Method (Hybrid) This is our favourite trick. Use the bread maker to handle the heavy lifting (kneading and proving), then transfer the dough to a bread dish with a lid to bake in the oven. The lid traps steam, creating an extra-soft, professional-style top crust that is simply irresistible.List item
The Traditional Method (Hand or Mixer + Oven) If you don’t have a bread maker or simply love the feel of the dough, you can go the traditional route. Knead by hand or with a stand mixer, let it prove in a warm spot, and bake it in the oven. This classic approach gives you that wonderful, artisanal “home-baked” result every single time.

No matter which path you take, this bread comes out amazing, moist, and flavourful. It’s a fool proof recipe that turns a simple loaf into something special!

Some bread makers require you to out the liquids first and then the dry ingredients. Other recommend the opposite - first the dry ingredients and then the liquids. So, please, do check and do accordingly.
  2. Fix the basket back into the bread maker and close the lid.
  3. Choose a program for fast or rapid bread making, plus baking.
Here you have the option to choose one of 2 steps - to bake the bread in the bread maker or to just use it for kneading and then to bake it in the oven.
  4. Wait until the end of the selected bread maker program.
Oven Method
  1. If you are not using a bread maker or doesn't have one, you can use an oven instead. In a deep bowl put the flour, the yeast and the sugar. Mix them together.
  2. Add the water and start mixing by hand to make a soft dough. It might be sticky at first, but it will get better when the gluten starts to develop. It will take you around 5-6 minutes to mix it well.
  3. Add the salt and the shredded carrots. Knead for another 2-3 minutes to make sure everything is mixed properly and the dough develops well.
  4. Cover the bowl with the dough with cling film (plastic wrap) and leave it to rest for at least 30 minutes or until it doubled in size.
  5. Take it out of the bowl and, with the help of your fist, try to push out as much as possible from the air in the dough.
  6. Form the dough into the shape that you want, put it into the baking tin that you will be using and leave it to double it size again. This time it will take you less time to do so, so keep an eye on it. The timeframe depends on the room temperature where you are proving the dough.
  7. When the dough has nearly doubled in size, preheat the oven. Set it to 180°C.
  8. Bake the bread for about 45 minutes. the baked bread should have a nice golden curst.
